A Protein Packed Frozen Summer Popsicle

Ever since we moved to the desert I have become a connoisseur of frozen summer treats; especially popsicles. The downside is that most pre-made popsicles are made with some pretty yucky ingredients or far too much packaging for my taste. Thankfully, I’ve created an easy recipe for Green Superfood Popsicles. And, with the added bonus of sneaking in these superfoods, you’re in for a boost of nutrition.

My recipe for perfect popsicles:

Freeze a smoothie.

That’s it! Ok, so I do have a little more to add…

It’s All About That Base… Smoothie Base

Before adding anything to your blender, first, you will need to add the liquid. I used about 1/4 cup of cashew milk, but you could use:

Next, your smoothie base is essentially the fruit flavors that you want to taste. Today I used:

  • 1 banana
  • 1 mango
  • 1/2 cup pineapple

But, you can use any fruit combo that you have on hand or that you like. When I was pregnant, I made these with ginger and orange or watermelon and mint to ease nausea.

Amp Up The Greens

I like to add some extra fiber, vitamins, and minerals in the form of greens. The one I’m currently obsessing over is spirulina (here). I also love Amazing Grass (here) or even just a handful of spinach. TAKE IT TO 11! With Extra Nutrition

This is when it really gets good. I like to add a combination of the following ingredients to take the nutrition to the next level:

Blend everything up and pour into popsicle molds. So EASY!
