I quickly pulled this recipe together at the request of my 3-year-old who wanted Halloween flavored muffins for breakfast. I just happen to have ingredients to make these yummy muffins, plus pack them full of veggies.

Here’s how.


  • 2 3/4 cups flour
  • 1 tsp salt
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/8 tsp ground clove
  • 1/2 tsp nutmeg
  • 1 tsp baking soda
  • 1 cup apple sauce (or 1 cup sugar/sweetener)
  • 1/2 cup brown sugar
  • 3 eggs (or flax eggs)
  • 15 oz pumpkin puree (1 can)
  • 3/4 cup coconut oil or butter
  • 1/4 cup apple cider (milk , apple juice, or water can be used)
  • 1/2 cup of grated and peeled summer squash or zucchini (optional)
  • 1 tsp vanilla extract

Cinnamon Sugar Topping

  • 2/3 cups sugar
  • 1 tsp ground cinnamon OR pumpkin pie spice
  • A dusting of powdered sugar


  • Combine flour, salt, spices and baking soda in a medium bowl and whisk to combine. Set aside.
  • In a large bowl, combine apple sauce, brown sugar, eggs, grated squash pumpkin, oil or butter, apple cider, and vanilla extract. Whisk to combine.
  • Slowly fold dry mixture into wet mixture just until combined.
  • Fill muffin pan about three-quarters full.
  • Bake at 350F for 30 min, or until a fork comes out clean when inserted in the center.
  • Let cool.

Cinnamon Sugar Topping

  • Combine sugar and cinnamon in a small bowl.
  • Brush top of muffins with melted oil or butter and dip each one in cinnamon/sugar.
  • Sprinkle with a dusting of powdered sugar.
